Sideline snacks for the BIG game + recipe ideas!

January 13, 2020

Are you making plans for the BIG game?! It's time to gear up for lots of delicious food, and a party that will have your guests running for the sidelines.

"Pig Skin" chili cups are sure to be a winning play during your party! I added crispy pork skins inside of football cups, and poured warm chipotle chili beans over the skins. Use the skins as a spoon to scoop out the tasty beans. Touchdown!

When shopping at Northgate market, I came across some delicious shrimp ceviche. A tasty blend of lime, cilantro, shrimp, tomatoes, and peppers. I added the mixture to cups of fresh guacamole and displayed them inside of a tiered tray for easy grabbing.

I set out boxes of crispy tortilla chips, and more cups of our "pig skin" chili cups.

Set a bowl of pork skins with a side of ceviche. Definitely a crowd-pleaser!

With the help of La Morena jalapeno peppers, and La Morena adobe chilis from Northgate market, I was able to whip up some tasty recipes and still have time to root on my team!

For my first recipe, I took canned beans and added some ground beef. As it simmered in the crockpot, I opened the can of La Morena chipotle peppers, and chopped them up to add a little kick to my recipe. The peppers have a delicious smoky flavor to them, and they smell wonderful! The definitely added lots of flavor.

I simmered the beans for about 30 minutes, and then poured them over cups of pork skins.

For my second recipe, I whipped up some sweet pepper black bean hummus bites. These were really simple to make, and oh-so-delicious! To give the black beans a little extra "kick", I chopped up La Morena jalapeno peppers, and added them to the bean mixture.

Here is what you'll need to make black bean hummus:

1 bag of colorful sweet peppers
13oz can of La Morena jalapeno peppers
1 cup refried black beans
1 garlic clove, minced
2 tablespoons olive oil
1 tablespoon white wine vinegar
1/2 ground cumin
salt and pepper

Next, mix all of the ingredients with your refried black beans. Make sure to mix & blend until smooth. You can also add everything into a food processor.

Take your sweet peppers and slice them lengthwise. Scoop out any unwanted seeds. The peppers are not spicy, and work perfectly as little bowls to hold the black bean hummus. The perfect blend of sweet & salty!

Once you fill your peppers, add them to a tray, and set out on your party table! Warning: they will quickly disappear.
